Description

A creamy and comforting dessert that combines the richness of mascarpone, the sweetness of pineapple, and the tropical flavor of coconut milk.


Ingredients

  • 250 g mascarpone
  • 3 eggs
  • 100 g sugar
  • 200 ml coconut milk
  • 1 fresh or canned pineapple
  • Ladyfinger biscuits
  • Cocoa powder for decoration

Instructions

  1. Separate the egg whites from the yolks. Whisk the yolks with sugar until creamy and light.
  2. Add mascarpone and coconut milk to the yolk mixture and mix well until smooth.
  3. In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the mascarpone mixture.
  4. Slice the pineapple into small pieces, ensuring canned pineapple is well-drained.
  5. Quickly dip ladyfinger biscuits into coconut milk and arrange a layer in a dish.
  6. Add a layer of mascarpone mixture followed by a layer of pineapple. Repeat until all ingredients are used, finishing with mascarpone mixture.
  7. Chill the tiramisu for at least 240 minutes to let the flavors meld.
  8. Before serving, dust the top with cocoa powder.

Notes

For best results, use fresh ingredients and let the tiramisu chill adequately to enhance the flavors.
