- 250 g mascarpone
- 3 eggs
- 100 g sugar
- 200 ml coconut milk
- 1 fresh or canned pineapple
- Ladyfinger biscuits
- Cocoa powder for decoration
Instructions
- Separate the egg whites from the yolks. Whisk the yolks with sugar until creamy and light.
- Add mascarpone and coconut milk to the yolk mixture and mix well until smooth.
- In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the mascarpone mixture.
- Slice the pineapple into small pieces, ensuring canned pineapple is well-drained.
- Quickly dip ladyfinger biscuits into coconut milk and arrange a layer in a dish.
- Add a layer of mascarpone mixture followed by a layer of pineapple. Repeat until all ingredients are used, finishing with mascarpone mixture.
- Chill the tiramisu for at least 240 minutes to let the flavors meld.
- Before serving, dust the top with cocoa powder.
