Description

A cozy and comforting leek tart reminiscent of grandmother’s kitchen, combining creamy leeks with a crispy crust.


Ingredients

  • 3 poireaux, cleaned and sliced
  • 150 g beef bacon (or turkey bacon)
  • 200 g crème fraîche
  • 100 g grated cheese (preferably comté or cheddar)
  • 1 pie crust
  • 4 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180°C. Clean and slice the leeks. In a pan, sauté the leeks with the beef bacon until tender and slightly golden, about 5-7 minutes.
  2. Spread the pie crust in a tart pan, ensuring to fix the edges well to prevent filling leaks.
  3. In a large bowl, whisk the eggs with the crème fraîche, salt, and pepper. Add the leek and bacon mixture, mixing gently to combine, then pour over the crust and sprinkle with grated cheese. Bake for 30-35 minutes until golden and puffed.

Notes

For a richer flavor, consider using smoked beef bacon. Ensure leeks are firm and green for the best taste. If crème fraîche is unavailable, plain yogurt can be a great lighter substitute. Check the tart in the last minutes of baking as oven temperatures vary.
