Savory Thai Soup with Rice Noodles

Description

A warm and nourishing Thai soup filled with rice noodles, coconut milk, and aromatic spices, perfect for cozy evenings.


Ingredients

  • 150 g rice noodles
  • 750 ml water
  • 1 vegetable broth cube or 1 tablespoon powder
  • 1 small onion
  • 1 small piece fresh ginger, grated
  • 2 tablespoons olive oil
  • 1 teaspoon or 1 tablespoon Thai red curry paste (optional)
  • 300 ml coconut milk or coconut cream
  • 1 stalk lemongrass, finely chopped
  • Salt, to taste
  • Pepper, to taste
  • 1 small bunch fresh cilantro
  • 2 limes, for serving

Instructions

  1. Bring a pot of water to a rolling boil. Add the rice noodles and cook for 1 to 2 minutes, or until al dente. Drain and rinse under cold water. Set aside.
  2. In another saucepan, heat 750 ml of water and dissolve the broth cube or powder. Meanwhile, in a large pot, heat olive oil over medium heat, sauté onion and ginger until golden and fragrant.
  3. Add the optional Thai red curry paste to the pot and cook for 1 minute. Pour in the warm broth, coconut milk, and lemongrass. Season with salt and pepper, then simmer for about 5 minutes.
  4. Set a portion of the cooked rice noodles in bowls, ladle the soup over the top, and garnish with cilantro and lime juice.

Notes

Adjust seasoning and spice level according to preference. Prep ingredients ahead of time to save cooking time.
