Description

A refreshing and nourishing green bean salad with tuna, perfect for a light lunch or a convivial dinner.


Ingredients

  • 6 green beans
  • 1 can of tuna in water
  • 1 small can of corn
  • 300 g cherry tomatoes
  • 2 spring onions
  • Croutons
  • 15 black olives
  • 3 tablespoons olive oil
  • 1.5 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the green beans under cold water, trim the ends, and steam for 5-7 minutes until tender but crisp. Transfer to cold water to stop cooking.
  2. Open the can of tuna, drain excess liquid, and flake with a fork. Drain the corn and rinse it under running water.
  3. Halve the cherry tomatoes and finely slice the spring onions.
  4. In a large bowl, combine the cooked green beans, flaked tuna, corn, halved tomatoes, sliced spring onions, and olives. Add croutons just before serving.
  5. In a small bowl, mix olive oil and balsamic vinegar, then season with salt and pepper. Drizzle over the salad and toss gently.

Notes

Use fresh green beans for a vibrant color and flavor. You can customize the salad with other vegetables, like bell peppers or shredded carrots.
