Description

A comforting and delicious dish combining quinoa, mushrooms, and fresh spinach, perfect for warming up after a long day.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 200 g mushrooms, sliced
  • 200 g fresh spinach
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water for a few minutes. In a saucepan, bring 2 cups of water to a boil. Once boiling, add the quinoa, reduce the heat, and cover. Simmer for about 15 minutes until tender and water is absorbed.
  2. While the quinoa cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and mushrooms. Cook for 5-7 minutes until the mushrooms are golden and tender, stirring occasionally.
  3. Once the mushrooms are cooked, add the spinach to the skillet. Cook until just wilted, about 2-3 minutes. Finally, stir in the cooked quinoa, mix well, and season with salt and pepper to taste. Serve hot and enjoy!

Notes

Adjust seasonings to taste; adding a squeeze of lemon juice can enhance the flavor. For a richer version, incorporate fresh cheese or grated parmesan at the end.
