Description

A delicious and convivial cast iron pizza recipe perfect for family gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon instant yeast or active dry yeast
  • 3/4 cup warm water
  • 2 tablespoons olive oil, plus more for the pan
  • 1 3/4 cups shredded whole mozzarella cheese
  • 1/2 cup marinara sauce (homemade or store-bought)
  • 1/2 cup cooked and crumbled spicy Italian sausage
  • 1/4 cup sliced black olives
  • Fresh basil leaves for garnish

Instructions

  1. In a large bowl, add flour, sugar, salt, Italian seasoning, and yeast. Mix well. Gradually add warm water and olive oil, mixing with a wooden spoon or your hands for 1-2 minutes until a sticky dough forms. Cover with plastic wrap and let rest for 5 minutes.
  2. After resting, perform the folding technique: place your hand in the bowl on the side of the dough, lift it, and fold it over. Rotate the bowl 90 degrees and repeat for a total of 4 folds. Let rest for another 5 minutes and repeat this step two more times.
  3. After the last fold, cover the bowl and let the dough rest at room temperature for 40 minutes. Then refrigerate for at least 12 hours, up to 72 hours for richer flavors and perfect texture.

Notes

For a lighter texture, mix all-purpose flour with bread flour. If you prefer a milder option, use shredded cooked chicken or grilled vegetables instead of sausage. Feel free to add other cheeses like Parmesan or feta for an explosion of flavors.
