Description

A rich and creamy Biscoff cake that combines the beloved flavors of Lotus Biscoff cookies with a smooth filling, perfect for celebrating any occasion.


Ingredients

  • 200g Lotus Biscoff cookies
  • 100g unsalted butter, melted
  • 200g cream cheese
  • 150g icing sugar
  • 150g crème fraîche
  • 200g Biscoff spread
  • 250g unsalted butter (for the cake)
  • 250g caster sugar
  • 500g icing sugar (for the Swiss buttercream)
  • 4 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F). Crush the Lotus Biscoff cookies into fine crumbs and combine them with the melted unsalted butter until wet sand forms.
  2. Press the cookie-butter mixture firmly into the bottom of a greased cake pan to create a solid crust.
  3. In a large mixing bowl, beat together the cream cheese, icing sugar, and Biscoff spread until smooth and creamy.
  4. In another bowl, beat the unsalted butter until light and fluffy. Gradually add the caster sugar, then incorporate the eggs one at a time and add vanilla extract.
  5. Gently fold the creamy Biscoff filling into the butter-and-sugar mixture.
  6. Pour the combined batter over the cookie crust and bake for 25-30 minutes or until golden brown.
  7. Cool the cake in the pan for a few minutes before transferring it to a wire rack to cool completely.
  8. Prepare the Swiss buttercream by beating the unsalted butter until fluffy, and gradually adding icing sugar until smooth.
  9. Dollop the Swiss buttercream on top of the cooled cake and spread evenly, decorating with extra Biscoff cookies if desired.
  10. Serve and enjoy your Biscoff cake with family and friends.

Notes

Let the cake cool completely before frosting to ensure the buttercream remains fluffy. This cake can also be made ahead of time and stored in the fridge.
