Description
A rich and traditional French pastry filled with almond cream, best enjoyed during the Epiphany.
Ingredients

- 2 rolls of puff pastry
- 125 g of almond powder
- 100 g of sugar
- 2 eggs
- 75 g of soft butter
- 1 egg yolk (for glazing)
- 1 fève (traditional but open to options!)
Instructions
- In a large bowl, mix the almond powder, sugar, and soft butter until smooth. Gradually add the eggs, incorporating them well to aerate the frangipane.
- Roll out one sheet of puff pastry on a baking tray lined with parchment paper. Spread the frangipane in the center, leaving about 2 cm at the edges. Don’t forget to place the fève in the filling!
- Cover with the second sheet of pastry and seal the edges well. Brush with egg yolk for a golden finish and make decorative slits on top.
- Bake at 180°C (350°F) for 25 to 30 minutes until golden brown. Allow to cool slightly before slicing and serving.
Notes
Using store-bought puff pastry saves time. Enhance the almond flavor with a hint of vanilla or lemon zest.
