Description

A rich and traditional French pastry filled with almond cream, best enjoyed during the Epiphany.


Ingredients

Scale
  • 2 rolls of puff pastry
  • 125 g of almond powder
  • 100 g of sugar
  • 2 eggs
  • 75 g of soft butter
  • 1 egg yolk (for glazing)
  • 1 fève (traditional but open to options!)

Instructions

  1. In a large bowl, mix the almond powder, sugar, and soft butter until smooth. Gradually add the eggs, incorporating them well to aerate the frangipane.
  2. Roll out one sheet of puff pastry on a baking tray lined with parchment paper. Spread the frangipane in the center, leaving about 2 cm at the edges. Don’t forget to place the fève in the filling!
  3. Cover with the second sheet of pastry and seal the edges well. Brush with egg yolk for a golden finish and make decorative slits on top.
  4. Bake at 180°C (350°F) for 25 to 30 minutes until golden brown. Allow to cool slightly before slicing and serving.

Notes

Using store-bought puff pastry saves time. Enhance the almond flavor with a hint of vanilla or lemon zest.
