Description

A creamy and nutty praliné dessert that brings warmth and joy to any family gathering.


Ingredients

  • 200g dark chocolate
  • 100g unsalted butter
  • 150g sugar
  • 3 eggs
  • 100g all-purpose flour
  • 100g chopped hazelnuts
  • 200ml heavy cream
  • 50g praliné
  • 4 sheets of gelatin
  • 80g pastry cream
  • Pinch of salt

Instructions

  1. Melt dark chocolate and unsalted butter together using a double boiler; stir in sugar until combined.
  2. Add eggs one at a time, mixing thoroughly after each addition.
  3. Sift in flour and salt, fold in chopped hazelnuts, pour into baking pan, and bake for 20 minutes at 180°C.
  4. Let the brownie base cool completely.
  5. Soften gelatin sheets in cold water for 5 minutes; combine pastry cream with heavy cream and praliné.
  6. Dissolve gelatin in a small amount of water, let cool, then fold into cream mixture.
  7. Spread diplomat cream over cooled brownie base, smooth it out, cover, and refrigerate for at least 4 hours.

Notes

Ensure the brownie is completely cooled before adding diplomat cream for best results.
