Ingredients

- 200g dark chocolate
- 100g unsalted butter
- 150g sugar
- 3 eggs
- 100g all-purpose flour
- 100g chopped hazelnuts
- 200ml heavy cream
- 50g praliné
- 4 sheets of gelatin
- 80g pastry cream
- Pinch of salt
Instructions
- Melt dark chocolate and unsalted butter together using a double boiler; stir in sugar until combined.
- Add eggs one at a time, mixing thoroughly after each addition.
- Sift in flour and salt, fold in chopped hazelnuts, pour into baking pan, and bake for 20 minutes at 180°C.
- Let the brownie base cool completely.
- Soften gelatin sheets in cold water for 5 minutes; combine pastry cream with heavy cream and praliné.
- Dissolve gelatin in a small amount of water, let cool, then fold into cream mixture.
- Spread diplomat cream over cooled brownie base, smooth it out, cover, and refrigerate for at least 4 hours.
Notes
Ensure the brownie is completely cooled before adding diplomat cream for best results.
