- 4 slices of pain de mie (soft sandwich bread)
- 100g goat cheese, sliced
- 4 tablespoons pesto
- 2 tablespoons butter, softened
- 100g cheese (such as Emmental or mozzarella), shredded
- Optional: A handful of mixed salad greens for serving
Instructions
- Start by heating your skillet or croque-monsieur maker over medium heat. Spread a layer of butter on one side of each slice of bread. Spread pesto on the unbuttered side of two slices.
- On top of the pesto, arrange the slices of goat cheese, then sprinkle the shredded cheese on the remaining slices.
- Close the sandwiches with the other half of the bread on top, buttered side facing out. Grill until golden brown and crispy, about 4-5 minutes on each side.
