Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 4 tomatoes, peeled and chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- 6 eggs
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped onion and red bell pepper, and sauté until tender.
- Add minced garlic and cook for an additional minute.
- Stir in the peeled tomatoes, cumin, paprika, salt, and pepper. Let simmer for 10 to 15 minutes until sauce thickens.
- Create small wells in the sauce and crack an egg into each well. Cover and cook until the egg whites are set, about 5 to 8 minutes.
- Garnish with fresh cilantro before serving.
Notes
For a sweeter sauce, use ripe tomatoes. You can also customize the spices and add seasonal vegetables as desired.
