Description

A comforting and flavorful dish featuring eggs poached in a rich tomato sauce with spices.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 tomatoes, peeled and chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 6 eggs
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and red bell pepper, and sauté until tender.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in the peeled tomatoes, cumin, paprika, salt, and pepper. Let simmer for 10 to 15 minutes until sauce thickens.
  4. Create small wells in the sauce and crack an egg into each well. Cover and cook until the egg whites are set, about 5 to 8 minutes.
  5. Garnish with fresh cilantro before serving.

Notes

For a sweeter sauce, use ripe tomatoes. You can also customize the spices and add seasonal vegetables as desired.
