Description

A delightful dessert with layers of crispy pastry, flavored almonds, and sweet syrup that evokes family memories and joy.


Ingredients

Scale
  • 1200 g de farine
  • 200 ml d’huile d’olive
  • Pincée de sel
  • 1200 g d’amandes mondées et torréfiées en poudre
  • 30 g d’épluchure d’orange en poudre
  • 200 g de sucre
  • 50 g d’eau
  • Quelques gouttes de citron
  • Pâte phyllo

Instructions

  1. In a large bowl, mix the flour with a pinch of salt and some olive oil. Gradually add water while stirring.
  2. Knead until you achieve a soft and manageable dough. Form small balls and let them rest under a damp cloth for a few minutes.
  3. Roll out one dough ball into a very thin layer (about 1 mm thick). Brush a baking dish with oil and place the first sheet of phyllo, letting the edges drape over.
  4. Continue layering 15 sheets of phyllo, brushing oil in between each layer.
  5. Bake until golden brown and crispy.

Notes

If you can’t find phyllo dough, you can substitute with brick sheets, although the texture won’t be the same. High-quality almonds make a big difference in taste.
