Ingredients

- 1200 g de farine
- 200 ml d’huile d’olive
- Pincée de sel
- 1200 g d’amandes mondées et torréfiées en poudre
- 30 g d’épluchure d’orange en poudre
- 200 g de sucre
- 50 g d’eau
- Quelques gouttes de citron
- Pâte phyllo
Instructions
- In a large bowl, mix the flour with a pinch of salt and some olive oil. Gradually add water while stirring.
- Knead until you achieve a soft and manageable dough. Form small balls and let them rest under a damp cloth for a few minutes.
- Roll out one dough ball into a very thin layer (about 1 mm thick). Brush a baking dish with oil and place the first sheet of phyllo, letting the edges drape over.
- Continue layering 15 sheets of phyllo, brushing oil in between each layer.
- Bake until golden brown and crispy.
Notes
If you can’t find phyllo dough, you can substitute with brick sheets, although the texture won’t be the same. High-quality almonds make a big difference in taste.
